Applied Food Sciences Announces Patent
Allowance for Its HealthyRoast Technology
Significantly More Antioxidants per
Cup of Coffee
AUSTIN, Texas--(BUSINESS WIRE)--Oct. 14, 2003--Applied Food Sciences,
Inc. (AFS(TM)) today announced that it received a notice of allowance
from the U.S. Patent and Trade Office for patent claims relating
to HealthyRoast(TM), the company's proprietary coffee roasting
process that substantially increases the antioxidant content
in brewed coffee when compared with traditional coffee roasting
methods.
Only AFS holds an exclusive worldwide license to the technology,
which is currently available to the health and beverage markets.
Many of the antioxidants found in green coffee beans are destroyed
during conventional roasting methods, and darker roast coffees
typically contain the least amount of natural antioxidants. HealthyRoast
technology involves an easy-to-implement, 100 percent natural process
for preserving the antioxidants in roasted coffee by pre-soaking
the green coffee beans before roasting and then quenching the roasted
beans with the liquid in which the coffee beans were first pre-soaked.
According to Loretta Zapp, AFS' CEO, "HealthyRoast is a very
effective, 100 percent natural roasting method that does not affect
the taste and aroma of brewed coffee. In fact, professional tasters,
or 'cuppers,' have commented that they can't taste a difference.
Coffee utilizing the HealthyRoast technology will be on grocery
store shelves early next year."
Coffee beans contain a group of the most potent plant-based antioxidants
known as polyphenols. Epidemiological studies have shown a relationship
between high dietary intake of these antioxidants and a wide range
of health benefits. In general, polyphenols are thought to deliver
health benefits by several mechanisms, including: (1) direct free
radical quenching, (2) protection and regeneration of other dietary
antioxidants such as vitamin E, and (3) chelation of metal ions.
Recent experimental studies in both animals and humans have shown
that increasing polyphenol antioxidant intake can elevate total
antioxidant capacity of the blood.
